This deconstructed sandwich works its magic without any bread at all. Instead, skewers hold the fillings together—we like the wooden ones best for their added traction, but metal will also work. For a Buffalo chicken version, swap in grilled chicken chunks brushed with hot sauce, and carrot and celery chunks. Use light blue cheese dressing for dipping. For an Italian deli hero version, swap in lean ham and light mozzarella, plus pickled peppers, olives, and tomatoes. Mix oil, vinegar, and dried oregano for dipping to hit all the right notes.

Cooked turkey breast without skin
2 pound(s), cut into 36 cubes
Grape tomatoes
36 item(s), or cherry tomatoes
1 undefined, or romaine lettuce, cut into 36 small chunks
Cooked turkey bacon
9 slice(s), cut into 36 pieces
Light mayonnaise

White wine vinegar

Uncooked scallion(s)

Instructions

Alternately thread 3 turkey cubes, 3 tomatoes, 3 lettuce chunks, and 3 pieces of turkey bacon on 1 skewer. Repeat to make a total of 12 skewers.

In small bowl, stir mayonnaise, vinegar, and scallions. Serve skewers with scallion mayonnaise.
