Garlicky spanish fingerling potatoes

Crispy roasted fingerling potatoes are tossed with minced garlic and smoked paprika for fabulous flavor. If they're too spicy, use sweet paprika instead. If these are too spicy for your taste, use sweet (dulce) paprika instead of picante. Fingerling potatoes often get confused with new potatoes. We were drawn to fingerling potatoes because of their unique shape and their flavor similar to a regular potato. Fingerling potatoes are long, narrow potatoes that are literally the shape of an actual finger.


Ingredients
Uncooked potato(es)
1½ pound(s), small fingerling, halved lengthwise
Olive oil
1 Tbsp, extra virgin
Kosher salt
1 tsp, or to taste
Jarred minced garlic
½ tsp
Paprika
½ tsp, smoked, picante recommended (or to taste)
Instructions

Preheat oven to 450ºF degrees. Line a baking sheet with parchment paper (or coat pan with cooking spray).

Toss potatoes with oil and salt; spread in a single layer on prepared pan. Roast, stirring once half-way through cooking, until browned and crispy, about 35 minutes. Toss roasted potatoes with garlic and paprika, season to taste and serve. Yields about 1 cup per serving.
