Seasoned canned tomatoes and Italian turkey sausage add instant life to chili. Try tomatoes with different seasonings to vary the flavor of your recipe. If you really like your chili spicy, use two cans of diced tomatoes with chiles, or canned, diced fire-roasted tomatoes. Italian turkey sausage also comes in different flavors such as mild, sweet, medium, and hot. Raw Italian turkey sausage is typically found in links. Four links are usually about 1 pound. Ten quick minutes of work in the morning and you can bring your family home to this hearty and warming meal. Serve with a crispy fresh arugula salad with some cut veggies and a simple vinaigrette, amplifying the vegetable profile of the entire meal.

Ingredients

Uncooked turkey sausage(s)

1 pound(s), hot-Italian variety

Canned pinto beans

15 oz, undrained

Canned diced tomatoes

14½ oz, with chilies, undrained

Canned diced tomatoes

14½ oz, with garlic and onions, undrained

Uncooked onion(s)

1 medium, chopped

Table salt

¼ tsp, or more to taste

Black pepper

¼ tsp, or more to taste

Uncooked scallion(s)

3 medium, thinly sliced, for serving

Instructions

Remove sausage from casing and place in a 4-quart or larger slow cooker; break up meat with a spoon. Add beans, both cans of diced tomatoes with their liquid, and onion; stir.

Cover slow cooker; cook on low setting for 5 to 6 hours. Stir in salt and pepper; garnish with chopped onion and/or scallion if desired and serve.
