A tangle of tempting textures and flavors best describes this unusual yet super-delicious, unforgettable salad. It can be made in less than 25 minutes and couldn't be easier to assemble. The only ingredient that requires any cooking is the quinoa, while the rest is tossed together in a bowl for simple prep. Whole-grain gluten-free quinoa is the perfect foil for the slightly bitter radishes, juicy navel oranges, and salty feta cheese. Store-bought red wine vinaigrette ties it all together. And if you've not had radish tops before, this is your chance—stop throwing them away, you're going to love them!


Ingredients
Uncooked quinoa
1 cup(s), red variety, rinsed
Orange(s)
3 medium, navel variety
Fresh radish(es)
4 large, with tops, halved and thinly sliced and tops torn
Low fat red wine vinaigrette salad dressing
¼ cup(s)
Table salt
½ tsp
Black pepper
¼ tsp
Reduced fat feta cheese

Prepare quinoa according to package directions. Let cool.

Meanwhile, halve and squeeze juice from 1 orange (you should have about 1/3 cup). Pour into salad bowl. Cut sections from remaining 2 oranges and add to bowl.

Add cooled quinoa, radishes and tops, vinaigrette, salt, and pepper to orange mixture and gently toss until mixed well. Sprinkle with feta.
