Grilled beef fajitas

The smoky taste of grilled beef goes perfectly with sweet onions and spicy salsa in this easy meal. Summer squash adds an interesting twist to this traditional Mexican favorite. To grill squash, you want to first be sure that the two pieces of squash you select are about the same size for even cooking. We grilled them in larger slices to help retain their textures and to keep them from overcooking. It also keeps them from falling between the grates. You can also grill the tortillas before preparing the fajitas.


Ingredients
Uncooked onion(s)
2 medium, Vidalia, thickly sliced
Uncooked summer squash
2 medium, yellow, sliced lengthwise
Cooking spray
1 spray(s)
Table salt
⅛ tsp, or to taste
Uncooked lean flank steak
8 oz
Black pepper
⅛ tsp, or to taste
Fat free salsa
½ cup(s)
Fat free flour tortilla(s)

Instructions

Preheat grill or grill pan. When hot, grill onion slices until soft and browned, about 5 minutes. Coat squash slices with cooking spray, salt them and grill until soft, about 3 to 5 minutes.

Season steak with salt and pepper on both sides; grill until cooked through, about 3 to 6 minutes. Remove from grill and slice into strips against the grain.

To assemble fajitas, put 2 tablespoons of salsa on each tortilla. Top each with 1/4 of onions, squash and beef; roll up and serve.
