Here's a fruity salsa to enjoy when fresh cherries hit the market but you can also make it with thawed, unsweetened ones anytime of the year. Pair this salsa with pita chips or your favorite whole grain crackers. It’s also equally delicious served as relish, spooned over grilled fish, pork or chicken or as stand-alone side dish. You don’t need to use a fancy tool or gadget to pit the cherries—a toothpick or small wooden skewer will work just as well. Simply insert the pointed end of either one you want to use through the stem-end until it hits the pit. Gently twist around the pit and pop it out.
