Here's a refreshing, simple salad of buttery lettuce leaves, crisp vegetables, and a bright vinaigrette. You can find all sorts of white wine vinegar in the grocery store these days from Champagne to Pinot Grigio. Add a few to your pantry to dress up your salads and marinades. English cucumbers are the kind you find shrink-wrapped in the produce department. They have thinner skins and smaller seeds than regular cucumbers. For a pretty presentation, peel away long strips of cucumber peel every half-inch or so with a vegetable peeler for a striped effect before you slice the cucumber into rounds. When in season, use watermelon radishes for a striking accent.

Ingredients

Bibb lettuce

1 head(s), leaves separated

English cucumber(s)

½ medium, halved lengthwise, thinly sliced

Fresh radish(es)

2 medium, thinly sliced

White wine vinegar

2 Tbsp

Olive oil

1½ Tbsp

Shallot(s)

1½ Tbsp, chopped, minced

Water

2 tsp

Honey

1 tsp

Table salt

¼ tsp

Black pepper

⅛ tsp, freshly ground

Slivered almonds

¼ cup(s), toasted

Instructions

Place 1/4 of lettuce leaves on each of four plates; top each with 1/4 of cucumbers and radishes.

In a small bowl, whisk together vinegar, oil, shallots, water, honey, salt and pepper until blended.

Drizzle about 1 tablespoon dressing over each salad; sprinkle each with 1 tablespoon almonds. Yields 1 salad per serving.
