Uncooked sweet yellow corn
¼ cup(s), or defrosted corn
Reduced-fat goat cheese
2 Tbsp
Fresh lime juice
1 tsp, or to taste
Whole-wheat tortilla
1 medium
Fat free salsa
2 Tbsp, red or green varieties, spicy recommended
How to Prepare
Combine zucchini, beans, corn, goat cheese and lime juice in a small bowl; spread across half of tortilla, fold over other half of tortilla and press down. Cook briefly in skillet (or microwave on HIGH) until warm and cheese is melted; serve with salsa.
