Ingredients
Onion, raw
1 medium, finely chopped
Carrot(s)
1 medium, finely chopped
Celery
1 individual, stick, finely chopped
Fennel seeds
2 tsp
Extra lean beef mince
400 g
Garlic
2 clove(s), crushed
Canned diced tomatoes
2 can(s), (2 x 400g cans)
Tomato paste
1 tbs
Dried oregano
2 tsp
Dried bay leaf
2 whole
Beef stock cube
1 individual
Pasta
180 g, linguine or spaghetti
Grated parmesan cheese
¼ cup(s), (20g)
Fresh basil
1 tbs, leaves
Oil spray
1 x 3 second spray(s)

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Add onion, carrot, celery and fennel seeds and cook for 6-8 minutes or until vegetables are soft.

Add mince, cook, breaking up lumps with a spoon for 5 minutes or until browned. Add garlic and cook for 1 minute. Add tomatoes, tomato paste, oregano and bay leaves. Crumble in stock cube and add 1½ cups (375ml) water. Bring to the boil, and simmer, covered for 40 minutes or until sauce is thick. Season with salt and pepper.

Just before serving, cook pasta in a large saucepan of boiling salted water following packet instructions. Drain and serve with sauce, cheese and basil leaves scattered over.
