Corn and avocado salsa

Grilling corn brings out its sweet juicy flavour and it works a treat in this fresh and zesty salsa. Perfect as a party starter with your favourite corn chips or served as a tasty side to grilled chicken or fish.


Ingredients
Corn
3 individual, cobs
Green shallot(s)
3 individual, finely chopped
Jalapenos
1 individual, deseeded, finely chopped
Garlic
1 clove(s), crushed
Ground cumin
¼ tsp
Chilli powder
¼ tsp, (optional)
Avocado
1 medium, chopped
Lime juice
2 tbs
Fresh coriander
2 tbs, finely chopped
Oil spray
1 x 3 second spray(s)

Lightly spray a non-stick grill pan with oil and heat over medium-high heat. Cook 3 x 160g corn cobs, turning occasionally, for 10-12 minutes, until lightly charred. Remove and cool. Working with 1 cob at a time, stand corn on a cutting board and slice kernels from cob with a sharp knife. Transfer kernels to a medium bowl. Add 3 finely chopped green shallots, 1 deseeded, finely chopped fresh jalapeño chilli, 1 crushed garlic clove, ¼ teaspoon ground cumin and ¼ teaspoon chilli powder (optional). Season with salt and pepper and mix well. Gently stir in 1 chopped medium avocado, 2 tablespoons lime juice and 2 tablespoons finely chopped fresh coriander. Serve.
