Butternut pumpkin soup

Ingredients
Brown onion
1 medium, chopped
Vegetable stock
2½ cup(s), (625ml)
Butternut pumpkin
1 kg, peeled and cut into 3cm cubes
Red apple, peeled (test) JB
1 medium, chopped
Ground nutmeg
⅛ tsp
Chives, fresh
1 tbs, finely chopped
Oil spray
1 x 3 second spray(s)

Lightly spray a large deep saucepan with oil and heat over medium-high heat. Add onions and cook, stirring often for 5 minutes or until softened. Add stock, pumpkin and apple, cover and bring to the boil. Remove lid, reduce heat to low and simmer uncovered for a further 10 minutes or until pumpkin is tender.

Use a stick blender to blend soup until smooth. Season with salt, pepper and nutmeg. Sprinkle with chives to serve.
